Chicken Kofta with Rocha Pear Tzatziki Sauce

– 400g Minced Chicken;
– 1 tbsp Ground Cumin
– 1 Chopped Onion
– 1 tbsp Garlic Powder
– 1 tbsp Chopped Coriander
– 1 tbsp Chopped Parsley
– 1 Greek Yogurt
– 50g Diced Cucumber
– 100g Diced Rocha Pear from the West Region
– Lemon Juice to taste
– 1 tbsp Chopped Mint
– 2 Pita Breads
– Extra Virgin Olive Oil to taste
– Salt to taste
– Black Pepper to taste
Step 1

In a bowl, mix the minced chicken with the cumin, chopped onion, garlic powder, chopped coriander, chopped parsley, salt, and pepper to taste.

Step 2

Using a wooden skewer, shape the meat around it to form the koftas.

Step 3

Mix the yogurt with the pear, cucumber, lemon juice, chopped mint, and season with salt and pepper to taste to create the tzatziki sauce.

Step 4

Grill the chicken skewers and set aside.

Step 5

On a plate, serve the chicken skewers, the tzatziki sauce, and the pita bread separately.
