Lettuce salad, PORTUGUESE Pear (Rocha) and mint pesto

1 large lettuce
• 2 Rochas pears
•150 g of fresh cheese, cut into cubes
• ½ spoon (dessert) of sugar
•2 cinnamon sticks
For peppermint pesto:
• 1 sprig of mint (leaves)
•½ bunch of parsley
• ½ cup (tea) of olive oil
•⅓ cup (tea) of grated Parmesan cheese
• Salt q.s.

Mint Pesto – Mix all ingredients in a blender until you get a sauce consistency.

Wash and dry the lettuce leaves.

Place the pears in a pot together with cold water and sugar and bring to the fire to cook until they are soft but firm.

Drain the pears and cut them into slices.

Place the lettuce leaves on a plate, spread the pear slices and the cheese.

Season with pesto sauce and serve immediately.
