PLUM PIE – WINNER OF THE “BEST RECIPE” COMPETITION

  • – Plums
  • – 180 g of sugar
  • – 4 eggs
  • – 2 egg yolks
  • – 5dl of milk
  • – 7ml port wine
  • – 2 tablespoons of cornstarch
  • – 3 tablespoons of apple and cinnamon jam
  • – 1 cinnamon stick

Confection:

  • In a container add the flour, sugar, melted butter and egg. Mix everything until the dough is homogeneous and consistent. Knead the dough with a rolling pin and place the dough in a tart pan.
  • In a pan, mix the sugar, eggs, egg yolks and cornstarch. Stir well and add the Port wine, cinnamon stick, milk and heat, stirring until it thickens. Reserve the preparation.
  •  On the base of the dough, already in the mold, arrange the plums cut into half moons.
  • Then add the filling and add plums cut into half moons over the filling. Then, bake in the oven (preheated) at 180 degrees for 30 minutes.  While the pie is in the oven, in a small container add two tablespoons of apple and cinnamon jam, one tablespoon of water and one tablespoon of sugar. Place over low heat in a bain-marie and stir until it becomes syrupy.
  • Leave to cool, and when the tart is ready, brush over it, then refrigerate.

 

Note: For those who don’t like the intense flavor of eggs, you can sift the yolks, in order to reduce their flavor.
