Rocha Pear Bruschetta, Tomato, and Sardine
– 2 Slices of Sourdough Bread
-100g Cherry Tomatoes
-1 Rocha Pear from the West
-1 Can of Portuguese Sardines in Olive Oil
-To taste: Chopped Cilantro
-To taste: Extra Virgin Olive Oil
-To taste: Balsamic Vinegar
-To taste: Salt
Step 1
Lightly toast the slices of bread after drizzling them with a splash of olive oil;
Step 2
Cut the cherry tomatoes into quarters and dice the pears into small cubes;
Step 3
In a bowl, mix the cherry tomatoes, pear, and chopped cilantro. Season with olive oil, salt, and balsamic vinegar to taste
Step 4
Remove the sardines from the can, and using a small knife, separate the two fillets by removing the central bone;
Step 5
On a plate, arrange the slices of bread, top them with the seasoned cherry tomato and pear mixture, and finish by placing the sardine fillets on top of the bruschettas.
